Pico de Gallo Recipe
This is the authentic recipe for classic Pico de Gallo but don’t be afraid to experiment to make it your own. Add diced cucumber, minced radish, chopped bell pepper or maybe even mango or peaches, whatever you like to create your own taste. Whatever your taste, we would love to know about your creative add-ins so let us know. For a great appetizer, add diced steamed shrimp!
Pico de Gallo
(makes 6 servings)
1 lb. tomatoes (3 or 4 medium size) ¼ inch diced
½ medium Spanish onions ¼ inch diced
1 jalapeno pepper seeded and finely minced
½ cup cilantro chopped
2 tbsp. fresh lime juice (1 lime)
½ tsp salt or to taste
¼ tsp black pepper
1 tsp lite olive oil
In a medium bowl, place diced tomatoes, onion, jalapeno peppers and chopped cilantro.
Stir in oil and lime juice then lightly season with salt and pepper or season to your taste.
Enjoy right away with corn chips or cover and refrigerate overnight.
