alike, Sale & Pepe is a true labor of love. Restaurateur Peter Semetis,
together with General Manager Brian Dwyer have each brought their
unique blend of artistry, tradition and command for perfection to this
highly rated restaurant situated in the heart of New York's financial
district.
PETER SEMETIS
Getting an early start,
Peter Semetis broke into the industry at 13 years of age in the famous
seafood houses of Sheepshead Bay. An able and adept student, he was
quickly propelled up the ranks and soon managed top name steak and
seafood establishments like Pappas and Randazzos along the popular
Brooklyn strip.
Peter supplemented his
years of hands-on training with a zealous academic pursuit. Through
his commitment and hard work, he earned a coveted Associated Degree
from New York City Technical College, a highly recognized culinary
program which has turned out an exciting roster of internationally
acclaimed chefs.
Peter's mastery of
traditional cuisine and flare for the nouveau adds daily excitement to
Sale & Pepe's extensive menu. From old-world fare to popular American
favorites, Peter adds twists to create unique taste sensations. In his
off-hours, Peter reads through more than a dozen food magazines each
month to seek out fresh ideas in food preparation and catering.
BRIAN DWYER
As Sale & Pepe's General
Manager, Brian Dwyer has the unique opportunity to do it all. From
restaurant supervision to brainstorming with staff chefs to prepare
the next day's menu, Brian puts his industry expertise to work. His
versatile background in corporate positions as an Executive Chef, make
him the perfect compliment to the Sale & Pepe staff.
Working side-by-side with
the restaurant owner, Brian has also mastered the art of perfection. From
classic fare to gourmet entrees, Brian ensures superior taste and
quality for each selection. The accomplished chef also oversees and
prepares all executive menu orders.
